What are you go-tos?
I am happy in the back yard for Memorial Day….it can be a goal to get the yard summer-ready (ish) for that weekend. I much prefer that to going anywhere in traffic, and coming home to a yard still waking up from its snow blanket.
We have several dishes that mean “summer”. Ribs, watermelon, snow cones. My favorite dish to make is Creamed Corn (with NO cream)…and it is SO good.
Simple, simple.
Creamed Corn
For 6 Ears of Shucked, Raw Corn
2 T Olive Oil
1/2 c Milk
1/2 t salt
1/2 t pepper
Several chopped fresh basil leaves
Use a knife to remove kernels into one bowl and a box grater to clean the rest into a second bowl.
Heat the kernels in olive oil for a few minutes until bright yellow.
Add the rest of the corn and milk.
Heat thoroughly and reduce liquid for a few minutes.
Add salt, pepper, and basil.
Terrifically rich and sweet and the basil adds a lively flavor.
